Types of Cocoa Beans

 

Forastero

 

The grand-daddy of them all. Purple colored beans known as the most ‘versatile’-Forastero are the most common type representing 80% of the world’s cacao supply. Its hearty growth, disease resistance and wide spread cultivation provide a higher yield & make the Forastero species a dependable year to year bean supply. Grown in Africa, Brazil, Central America and Southeast Asia.

 

Criollo

 

The luxury bean. Criolio is the most fragile, and therefore the rarest type of cacao bean, representing less than 3% of the world’s bean production. It is the least bitter of all the beans, and is commonly blended with other types because of scarcity and expense. Climate continues to impact its ability to thrive and survive, further limiting its availability each year. It is grown in Columbia, Guatemala, Mexico, Nicaragua, Venezuela, Madagascar, the Samoan Islands and Sri Lanka.

 

Trinitario

 

A natural hybrid of Forastero and Criollo beans, Trinitario emerged following Trinidad’s catastrophic hurricane of 1727 and now represents approximately 12% of the world’s bean production. Forastero seeds naturally cross-pollinated with the native Criollo  resulting in the Trinitario. Found mostly in the Caribbean, Trinitario also grows in Venezuela and Colombia.

Miodo Wild Harvest Rio Beni 75% Dark Chocolate Bar 2oz

Bolivia Rio Beni Wild Harvest beans are unique, they are very small and comes with a bold chocolately aroma with hints of fresh leaf tabaco and green walnuts. Overall impression is one of dark juicy fruits and a smooth, soft, lingering lighted roasted Brazil nut suppleness, with a muted astringency in the background.

Bolivia Rio Beni beans are harvested mostly by indigenous people usually between December and mid February. The beans are The beans go then straight into special designed wooden fermentation boxes. The post harvest protocol was developed in 2003 and is mainly adapted to the size of the beans including slow sun drying. ​

Miodo Madagascar Sambirano 75% Dark Chocolate Bar 2oz (Trinatario)

 

A flavor powerhouse of a cocoa bean with fruitty-floral aromatis featuring raisin and cherry notes with depth and zing. Strong chocolate presence with medium astringincy.

These clean, red tone beans are certified Organic from a Single Estate Cacao from the Northern Ambanja.

Miodo Columbia Boyaca 75% Dark Chocolate Bar 2oz (Criollo/Trinatario)

 

Made from this dry, earthy and nutty bean with notes of dutch cocoa and a little blueberry tang and a delightful hint of sun warmed wild huckleberry and a mineral like edge.

The beans that make this bar are a bit more rare due to its more delicate growing nature and lower production ability.

Miodo Haiti PISA 75% Dark Chocolate Bar 2oz (Trinitario)

 

A big bean with a perfect storm of chocolate, caramelized sugars, and juicy dark berries.   

PISA launched their centralized processing facility in 2014, which was a revolutionary change for the way the cacao industry worked in Haiti, offering the first high quality Haitian cacao to the US market.

Miodo Fiji Matasawalevu 75% Dark Chocolate Bar 2oz (Forastero)

 

Very balanced- Sweet dried fruits and vanilla with a slight nutty leather and tobacco leaf balanced by a gentle sour acidity. There is also a crème brule caramelization that is a sharp tangy shot to the senses. These Direct Trade beans are from the Mataswalevu Cocoa Farm in Dreketi, Macuata in the hills of Northern Fiji. Dreketi is located in the province of Macuata on Vanua Levu.

Miodo Tanzania 75% Dark Chocolate Bar 2oz (Trinatario)

 

Deep flavor with an aroma of clear, deep, resonating raisin and chocolate. There are additional base notes of burnt sugar and tight dark fruit.The beans that make this bar are for the Kokoa Kamili cooperative which currently works with approximately 1,500 small shareholder farmers, most of whom farm between 0.5-2 acres of cocoa. Kokoa Kamili pays a premium--well above the market rate--to farmers for their ‘wet’ cocoa, and conducts its own fermentation and drying.

Miodo Peru Saposoa 75% Dark Chocolate Bar 2oz (Criollo/Trinatario)

 

Thick, warm, tangy grape jam aroma with a clean sweetness, a slightly higher bitterness over astrigency but with undertones of warm spice and great overall balance. These are organic beans that come to the U.S. via Fair Trade. These are a blend of beans from the San Martin (Saposa), Peru.

Miodo Venezuela Criollo 75% Dark Chocolate Bar 2oz (Criollo)

 

This bean has a medium fruited chocolate with good chocolate flavor.  The chocolate itself has a delicate brightness and nuttiness. After that, there are some savory aromas. Overlaid on all of that is a soft tartness (not really acidity) of raisin and dried cranberry..These beans are brought to the U.S. via farm purchase.
